Dehydrated produce is often picked early, just like fruit from the grocery store, so the product is not dehydrated at the moment, which is best for the fruit. That means that the taste and nutritional value of the food suffer compared to freeze-dried. Dehydrated food also tends to have a shorter shelf life. For these reasons, you’ll sometimes find dehydrated products with added sugars and preservatives.
