Meet the Okanagan Valley in British Columbia, Canada. Our home is known for amazing lakes, world-class wineries, and farm-fresh Okanagan fruit. You can spot the orchards from the road yourself, teeming with delicious apples, cherries, strawberries, and more of your favourites. So, how do we capture that freshness to share with you?
The gift of timing
Big Air is lucky enough to live with this fresh produce in our backyard and that gives us the gift of timing. We work with neighbouring farms to harvest at the perfect moment so the fruit can reach peak ripeness for more flavour and maximum nutrition.
“We capture fresh by allowing the fruit to reach its full level of ripeness,” says Colin Davison, CEO of Big Air Foods. “All the important sugars and nutritional value can go to their maximum degree on the field while it's in the earth. Our products are Dried Fresh.”
Why timing matters
When produce has to travel to a grocery store, it’s picked ahead of perfection to allow transportation time before it spoils. In our case, fruits and vegetables can be harvested at an ideal time since they don’t have to travel far.
“Produce doesn't have to be pre-picked to avoid spoilage. We can allow it to go to full ripeness and preserve the exact conditions as the day it was harvested. Our products are Dried FRESH.” says Colin.
Freeze! Put your stems up!
We've captured your fresh fruit, and within half an hour, it is frozen at the Big Air facility. Don’t worry; you won’t find these fruit snacks behind bars. They’re headed for your pantry!
Drying—but make it science
Next, we take the frozen produce through a special drying process. Brace yourself for a science moment: this is called freeze-drying or lyophilization.
It’s a fancy word for the drying process of using extremely high pressure and low temperature to remove water, naturally preserving perishables and extending their shelf life.
This process takes moisture away but leaves all of the taste and nutritional value so we can share it with you.
