Cherry-Chocolate and Peanut Butter Protein Bites

Ingredients:

  • 1 ½ cups oats, regular or quick-cooking, not steel-cut
  • 1 cup Big Air Foods freeze-dried cherries, quartered.
  • ⅓ cup peanut butter, preferably all-natural
  • ¼ cup semi-sweet chocolate chips
  • 2 tablespoons maple syrup
  • ½ teaspoon vanilla

Instructions:

  1. Combine all the ingredients in a bowl and hand mix until blended (the mixture will start to come together).
  2. Shape the mixture into 16-24 balls, and place the balls on a parchment-lined baking sheet.
  3. Refrigerate until firm, about 30 minutes.
  4. Store the balls in an airtight container in the refrigerator.
